My name is Nicole, and I describe myself as a travel, food, and experience enthusiast. I receive immense joy from traveling and exploring all the wonderful and new things that surround me in my backyard and, most of all, those that beckon me from thousands of miles away.
I believe that at the very foundation of a person’s passion for travel, food, and exploration lies something bigger. I could be wrong, but I don’t believe that travel in itself is the be all end all of our endless saving and die-hard loyalty to our TripAdvisor accounts. For some, travel is a way to reconnect with their culture. While others use it as a way to push themselves outside of their comfort zone. Me, I am a self-proclaimed experience junkie!
I travel to feed my ongoing hunger for experiencing new things, new cultures, new ideas, new ways of life, and things I didn’t even know were possible. I’ve found that each experience offers me the opportunity to learn something not only about that new “fill in the blank,” but also about myself. So, Nicole Eats and Travels is more than just a diary of the places I’ve been and seen, rather it is a continuous and evolving discussion of the lessons I’ve learned both about myself and the world around me from the things I’ve experienced and places I’ve visited.
I’ve journeyed to other countries, but I’ve also seen many of the great places in the U.S. I’ve come to learn that neither experience is more superior than the other; both international travel and local trips provide great opportunities to see the best and not so good parts of ourselves reflected back to us.
Please feel free to leave your insight, both good and not so good. I hope something in this blog inspires you to pack your bags and go on that trip you’ve always dreamed of. I look forward to hearing about your experiences.

Happy Travels,
